For our Crémant de Bourgogne Blanc de Noirs – 100% Pinot Noir we have selected the finest plots of Pinot Noir, exclusively from the 2019 vintage. This limited-edition Cuvée reflects the excellence and expertise of the House over time.
Vinification :Made using the Traditional Method. On receipt of the harvest we carry out a slow pressing using our pneumatic presses. We only keep the first presses to elaborate our vintages. Malolactic fermentation is carried out in our 100% stainless steel vats. The setting of the foam, carried out in the bottle (according to the traditional method), is done by adding yeast and sugar. Aged on the lees for 18 months in our temperature-controlled cellars.
